Green Pea Soup
Ingredients:
3 tablespoons butter
1/2 sweet onion, chopped
1/2 teaspoon salt
2 cups chicken stock
2 cups water
6 cups frozen peas
1/4 cup whipping cream
1/2 cup freshly chopped chives or mint
Directions:
Melt butter in a large heavy bottom saucepan or pot over medium heat. Cook the onion until soft and translucent, about 5 minutes. Pour in chicken stock, water and peas. Bring mixture to a boil, then reduce heat to low, cover, and simmer until peas are tender, 12 –18 minutes. Puree the soup using an immersion blender, or puree in batches with a blender. Stir in cream. Season to taste with salt and pepper and garnish with chives or mint before serving.
Makes 10-12 Servings
Leprechaun Kisses
Ingredients
4 egg whites
¼ teaspoon cream of tartar
½ teaspoon vanilla
½ cup sugar
Food coloring (optional)
Directions:
Preheat oven to 200 degrees. Combine egg whites, cream of tartar and vanilla in bowl of stand mixer (or hand mixer). Mix eggs on low until broken up, then switch to medium-high and beat until egg whites begin to thicken and small peaks form. Continue mixing, slowly sprinkle in sugar. Add a few drops of food coloring, if desired. Continue mixing until mixture is glossy and stiff. (Do not overbeat or eggs will collapse.) Pipe or drop heaping tablespoons of the mixture onto 2 parchment lined baking sheets. Bake for 90 minutes. Turn off the oven, leave cookies inside and let them cool and dry (2 hours to overnight). Remove from oven. Store in an airtight container.

Over the Rainbow Salad
Ingredients:
1 cup cherry tomatoes
1 cup snack-sized whole carrots
1 yellow bell pepper, chopped
1/2 cucumber, chopped
1/4 purple cabbage, chopped
Your favorite salad dressing
Directions:
Arrange cherry tomatoes in a large arch. Lay carrots under the tomatoes followed by a row of bell pepper, cucumber and cabbage.Serve with salad dressing for dipping.
