Gluten-Free
Creamy Queso Dip >> Use gluten-free flour.
Sizzling Steak Fajitas >> Use corn tortillas.
Vegetarian
Chicken Tortilla Soup >> Use vegetable broth instead of chicken broth. Omit steps 7 through 9. Instead of chicken, add 1 can of black beans (drained), along with the tortilla strips in step 10. Alternatively, you could add shredded Jackfruit or Beyond Meat Beyond Chicken Strips.
Vegan
Chicken Tortilla Soup >> Use vegetable broth instead of chicken broth. Omit steps 7 through 9. Instead of chicken, add 1 can of black beans (drained), along with the tortilla strips in step 10. Alternatively, you could add shredded Jackfruit or Beyond Meat Beyond Chicken Strips. Use dairy-free cheese for topping.
Creamy Queso Dip >> Use dairy-free jack and cheddar cheese, such as Parmela Creamery, Follow Your Heart, or Daiya. Use a dairy-free evaporated milk, such as Nature’s Charm evaporated coconut milk.
Sizzling Steak Fajitas >> Use seitan in place of flank steak. You can purchase pre-sliced seitan, or make your own and slice into strips.
